Rainbow Salad
Ingredients:

- 1 onion, diced
- ½ broccoli, chopped
- 1 green bell pepper, diced
- 10 baby corns, blanched
- 10 cherry tomatoes, halved
- Pizza seasoning
- Thousand Island dressing
- Salt and pepper, to taste

Directions:

- Mix all the ingredients together.
- Add the seasoning on top.
- Serve cold.
Green Salad
Ingredients:

-
- 1 bunch lettuce, torn
- 1 bunch spinach, torn
- 1 bunch arugula
- 1 broccoli, blanched
- ½ green bell pepper, sliced
- Olives – green and black
- Jalapenos
- Sun-dried tomatoes
- 2 avocado
- Juice of 2 lemons
- ½-1 tsp. red pepper flakes
- 1 tsp. olive oil
- Salt and pepper, to taste

Directions:

- Avocado dressing: Mash the avocados. To the paste, add the olive oil, lemon juice, red pepper flakes and salt.
- Mix the rest of the ingredients together.
- Add the dressing on top.
- Serve cold.
Sunrise Salad
Ingredients:

- 1 bunch lettuce
- 3 radish, grated
- 2 tomatoes, finely cut
- Juice of 1 lemon
- Black salt and red pepper flakes, to taste

Directions:

- Arrange whole lettuce leaves as a base.
- Add grated radish and tomatoes as layers on top.
- Add the seasoning on top.
- Serve cold.
Mediterranean Chickpea Salad
Ingredients:

- ½ red onion, diced
- 1 red bell pepper, sliced
- 1 can (250 mL) no salt-added chickpeas, rinsed and drained
- 2 cloves garlic, minced
- Large handful parsley leaves, finely chopped
- Juice of half a lemon
- ½-1 tsp. red pepper flakes
- Salt and pepper, to taste
- 1 tbsp. olive oil (optional)

Directions:

- Mix the ingredients together.
- Add the seasoning on top.
- Serve cold.
Note: If you’d like to cook this, please saute the onions, red bell peppers, chickpeas and garlic on medium heat in olive oil. Add the seasoning and serve warm.
Italian Salad
Ingredients:

- ½ onion, diced
- 1 yellow bell pepper, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- ½ broccoli, blanched
- 2 tomatoes, diced
- Olives – green / black
- Sun-dried tomatoes
- Fresh basil, torn
- Oregano seasoning
- Thyme seasoning
- Balsamic vinaigrette
- 1 cup pasta, boiled

Directions:

- Mix together all the ingredients.
- Mix in the boiled pasta.
- Add the seasoning on top.
- Chill for 2 hours.
- Serve cold.
