Check out some fun and yum vegan salads! Eat them as a snack, appetizer or main course – you won’t be disappointed 😉
Rainbow Salad
Ingredients:
      • 1 onion, diced
      • ½ broccoli, chopped
      • 1 green bell pepper, diced
      • 10 baby corns, blanched
      • 10 cherry tomatoes, halved
      • Pizza seasoning
      • Thousand Island dressing
      • Salt and pepper, to taste
Directions:
    1. Mix all the ingredients together.
    2. Add the seasoning on top.
    3. Serve cold.
Green Salad
Ingredients:
      • 1 bunch lettuce, torn
      • 1 bunch spinach, torn
      • 1 bunch arugula
      • 1 broccoli, blanched
      • ½ green bell pepper, sliced
      • Olives – green and black
      • Jalapenos
      • Sun-dried tomatoes
      • 2 avocado
      • Juice of 2 lemons
      • ½-1 tsp. red pepper flakes
      • 1 tsp. olive oil
      • Salt and pepper, to taste
Directions:
    1. Avocado dressing: Mash the avocados. To the paste, add the olive oil, lemon juice, red pepper flakes and salt.
    2. Mix the rest of the ingredients together.
    3. Add the dressing on top.
    4. Serve cold.
Sunrise Salad
Ingredients:
      • 1 bunch lettuce
      • 3 radish, grated
      • 2 tomatoes, finely cut
      • Juice of 1 lemon
      • Black salt and red pepper flakes, to taste
Directions:
    1. Arrange whole lettuce leaves as a base.
    2. Add grated radish and tomatoes as layers on top.
    3. Add the seasoning on top.
    4. Serve cold.
Mediterranean Chickpea Salad
 
Ingredients:
      • ½ red onion, diced
      • 1 red bell pepper, sliced
      • 1 can (250 mL) no salt-added chickpeas, rinsed and drained
      • 2 cloves garlic, minced
      • Large handful parsley leaves, finely chopped
      • Juice of half a lemon
      • ½-1 tsp. red pepper flakes
      • Salt and pepper, to taste
      • 1 tbsp. olive oil (optional)
Directions:
    1. Mix the ingredients together.
    2. Add the seasoning on top.
    3. Serve cold.
Note: If you’d like to cook this, please saute the onions, red bell peppers, chickpeas and garlic on medium heat in olive oil. Add the seasoning and serve warm.
Italian Salad
Ingredients:
      • ½ onion, diced
      • 1 yellow bell pepper, diced
      • 1 red bell pepper, diced
      • 1 green bell pepper, diced
      • ½ broccoli, blanched
      • 2 tomatoes, diced
      • Olives – green / black
      • Sun-dried tomatoes
      • Fresh basil, torn
      • Oregano seasoning
      • Thyme seasoning
      • Balsamic vinaigrette
      • 1 cup pasta, boiled
Directions:
    1. Mix together all the ingredients.
    2. Mix in the boiled pasta.
    3. Add the seasoning on top.
    4. Chill for 2 hours.
    5. Serve cold.
